Our staff came from a diversity of backgrounds and cultures. Our manager / chef (and resident "Mexican") David Mendoza was born and raised in Mexico until, at the age of 15, he moved to the United States with his family. He speaks fluent Spanish (so if you're celebrating your birthday at Bandidos, he may surprise you with a Mexican birthday song). Though not a professional chef by training, his passion for food and cooking began at the early age of 11 and has continued since (even through his 23-year career in the US Marine Corps). The other side of the management team Margie Mihlbauer was born and raised in the US, spending the largest portion of her life in Hawaii where she received her MBA in 1994. Her expertise is focused more on the business side of things. Both have resided in Palau for over 10 years. The kitchen and service staff hail from the Philippines. Jona Aclan and Chat Miraflor comprised our front service staff, while Jommel Dionsio and Larry Soliven assisted in the back. |
